Snickerdoodles

1 cup butter (softened)  
1 1/2 cup sugar
2 eggs (beaten)
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoons baking soda

Cinnamon sugar for rolling
3 tablespoons sugar
1 tablespoon cinnamon
      

Preheat oven to 400F.  Mix flour, cream of tartar, and baking soda. Set flour mixture aside.  Cream butter and sugar at medium speed until fluffy.  Add eggs while mixing at low speed.  Slowly add flour mixture until well mixed.

Roll into 1 inch diameter balls.  Coat balls by rolling in cinnamon sugar mixture.  Place on cool ungreased cookie sheets.  Bake 8 – 10 minutes. Edges will have hint of light golden brown. Cool on sheet 1 minute before removing to wire rack.

Note: Cookies will spread significantly during cooking.  If making larger cookies, edges will be crispy and golden brown and center will be soft.
